You will need a 25 cm (approximately 10-inch) diameter baking pan for this recipe.
Dough
- 2 cups all-purpose flour;
- 1 cup sugar;
- 0.5 tsp baking soda;
- 0.5 tsp citric acid;
- 50–100 g butter;
- 1 cup kefir or ryazhenka (fermented baked milk);
- a ½ tsp vanilla extract.
Filling
- 0.5 kg apples;
- 3–4 tbsp sugar (if the apples are sour);
- 0.5 tsp cinnamon.
Instructions
Mix all dry ingredients, then rub in the butter until the mixture resembles crumbs. Add the kefir and stir until just combined. Grease the baking pan and dust it with flour. Arrange the apple slices, coated in sugar and cinnamon, evenly over the bottom.
Pour the batter over the apples and smooth the top with moistened hands. Bake at 200°C for 40–50 minutes. Let the pie cool in the pan before removing.
